Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (10 oz) Rotel tomatoes with green chilies, undrained
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups corn chips (such as Fritos), slightly crushed
- 2 cups shredded cheddar cheese
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup sliced black olives
- 1/4 cup chopped cilantro
- Sour cream and salsa for serving
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C).
- Cook the ground beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease.
- Add seasoning and tomatoes: Add the taco seasoning and Rotel tomatoes (including the juice) to the ground beef. Stir well and let it simmer for a few minutes until the mixture thickens slightly.
- Add the black beans: Stir in the black beans and cook for another 2-3 minutes until heated through.
- Assemble the casserole: Spread half of the slightly crushed corn chips in the bottom of a 9×13 inch baking dish. Pour the beef mixture over the chips, spreading it out evenly. Sprinkle 1 cup of shredded cheese over the beef mixture. Top with the remaining crushed corn chips and then sprinkle the remaining 1 cup of shredded cheese on top.
- Bake: Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
- Add toppings: Remove the casserole from the oven and let it cool for a few minutes. Top with shredded lettuce, diced tomatoes, red onion, black olives, and chopped cilantro.
- Serve: Serve the Walking Taco Casserole with sour cream and salsa on the side.
