Instructions:

- Add the warm water and olive oil to the dry ingredients. Mix until a dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. If the dough is too sticky, add a little more flour.

- Place the dough back in the bowl, cover it with a clean towel, and let it rest for about 15-20 minutes. This helps to relax the gluten and makes rolling out the dough easier.
- Divide and Roll Out:
- Divide the dough into 4-6 equal pieces, depending on how large you want your flatbreads.
- Roll each piece into a ball, then flatten and roll out each ball on a lightly floured surface until about 1/8 inch thick.
- Cook the Flatbreads:
- Heat a large skillet or griddle over medium-high heat. Brush the surface with a little olive oil.
- Place a rolled-out piece of dough in the hot skillet. Cook for about 1-2 minutes on each side, until golden brown spots appear and the bread is cooked through. Adjust the heat if necessary to prevent burning.
- Repeat with the remaining pieces of dough, adding more olive oil to the skillet as needed.
- Serve:
- Serve the flatbreads warm, brushed with a little extra olive oil if desired. They can be enjoyed plain or with your favorite toppings or dips.
