Here’s a simple recipe for a no-sugar-added apple cake:

Ingredients:

  • 2 cups of almond flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • 3 large eggs
  • 1/4 cup of unsweetened applesauce
  • 1/4 cup of melted coconut oil or butter
  • 1 teaspoon of vanilla extract
  • 2 medium-sized apples, peeled, cored, and diced
  • Optional: chopped nuts or seeds for topping

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a cake pan with coconut oil or line it with parchment paper.
  2. In a large bowl, mix together almond flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk the eggs. Add applesauce, melted coconut oil (or butter), and vanilla extract. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the diced apples.
  6. Pour the batter into the prepared cake pan, spreading it evenly.
  7. If desired, sprinkle chopped nuts or seeds on top of the batter for extra flavor and texture.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  10. Slice and serve your delicious no-sugar-added apple cake!

This cake is moist, flavorful, and sweetened naturally by the applesauce and fresh apples. Enjoy!
