Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Chicken Breasts: Butterfly the chicken breasts by slicing them horizontally without cutting all the way through. Open them up like a book. Season both sides with salt, pepper, and Italian seasoning.
- Stuff the Chicken:
- Place 3-4 asparagus spears in the center of each chicken breast.
- Sprinkle shredded mozzarella cheese over the asparagus.
- Fold the chicken breasts over the filling and secure the edges with toothpicks to keep the stuffing inside.
- Sear the Chicken:
- Heat the olive oil in an oven-safe skillet over medium-high heat.
- Add the minced garlic and cook for about 30 seconds until fragrant.
- Place the stuffed chicken breasts in the skillet and sear for about 3-4 minutes on each side, until they are golden brown.
- Add Tomatoes: Add the cherry tomatoes around the chicken breasts in the skillet.
- Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
- Serve: Remove the toothpicks and serve the stuffed chicken breasts hot with the roasted cherry tomatoes on the side.
