Ingredients:

  • 4 boneless, skinless chicken breasts
  • 12-16 asparagus spears, trimmed
  • 1 cup shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Toothpicks

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Chicken Breasts: Butterfly the chicken breasts by slicing them horizontally without cutting all the way through. Open them up like a book. Season both sides with salt, pepper, and Italian seasoning.
  3. Stuff the Chicken:
    • Place 3-4 asparagus spears in the center of each chicken breast.
    • Sprinkle shredded mozzarella cheese over the asparagus.
    • Fold the chicken breasts over the filling and secure the edges with toothpicks to keep the stuffing inside.
  4. Sear the Chicken:
    • Heat the olive oil in an oven-safe skillet over medium-high heat.
    • Add the minced garlic and cook for about 30 seconds until fragrant.
    • Place the stuffed chicken breasts in the skillet and sear for about 3-4 minutes on each side, until they are golden brown.
  5. Add Tomatoes: Add the cherry tomatoes around the chicken breasts in the skillet.
  6. Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
  7. Serve: Remove the toothpicks and serve the stuffed chicken breasts hot with the roasted cherry tomatoes on the side.

Tips:

  • For extra flavor, you can add a slice of prosciutto or ham along with the asparagus.
  • You can also drizzle a little balsamic glaze over the chicken before serving for added flavor.
