Spinach Mashed Potatoes
Ingredients:
- 2 pounds potatoes, peeled and cubed
- 1 cup fresh spinach, chopped
- 1/2 cup milk (or more, as needed)
- 1/4 cup butter
- 1/2 cup sour cream
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: grated Parmesan cheese or shredded cheddar cheese
Instructions:
- Boil the Potatoes:
- Place the cubed potatoes in a large pot and cover them with cold water.
- Add a pinch of salt to the water.
- Bring to a boil over high heat, then reduce the heat to medium and simmer until the potatoes are tender, about 15-20 minutes.
- Prepare the Spinach:
- While the potatoes are cooking, place the chopped spinach in a colander.
- Pour a small amount of boiling water over the spinach to wilt it slightly.
- Drain well and squeeze out any excess water. Set aside.
- Mash the Potatoes:
- Drain the cooked potatoes and return them to the pot.
- Add the butter, sour cream, and minced garlic to the pot.
- Mash the potatoes using a potato masher or an electric mixer until smooth.
- Combine Spinach and Potatoes:
- Stir the wilted spinach into the mashed potatoes.
- Gradually add the milk, a little at a time, until you reach the desired consistency.
- Season and Serve:
- Season the mashed potatoes with salt and pepper to taste.
- If desired, stir in grated Parmesan cheese or shredded cheddar cheese.
- Serve warm.
