Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1/4 cup chicken or vegetable broth
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 teaspoon sugar (optional)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions:

  1. Prep the Shrimp: Pat the shrimp dry with paper towels. Season with a little salt and pepper.
  2. Make the Sauce: In a small bowl, mix the soy sauce, oyster sauce, cornstarch, chicken or vegetable broth, and sugar (if using). Set aside.
  3. Cook the Shrimp: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes until pink and opaque. Remove the shrimp from the pan and set aside.
  4. Stir Fry Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the garlic and ginger, and sauté for about 30 seconds until fragrant. Add the broccoli and red bell pepper, and stir fry for 4-5 minutes until the vegetables are tender-crisp.
  5. Combine Everything: Return the shrimp to the pan. Pour the sauce over the shrimp and vegetables. Stir everything together and cook for another 1-2 minutes until the sauce thickens and coats the shrimp and vegetables evenly.
  6. Finish with Sesame Oil: Drizzle the sesame oil over the stir fry and give it a final stir.
  7. Serve: Serve hot over cooked rice or noodles.
