Potato Pancakes (Latkes)
Ingredients:
- 4 large potatoes
- 1 medium onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
- Optional toppings: sour cream, applesauce, chives
Instructions:
- Prepare the Potatoes and Onion:
- Peel the potatoes and the onion.
- Grate the potatoes and the onion using a box grater or a food processor.
- Remove Excess Moisture:
- Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible. This step is crucial for getting crispy pancakes.
- Mix Ingredients:
- Transfer the grated and drained potatoes and onion to a large bowl.
- Add the eggs, flour, salt, and pepper. Mix well until the ingredients are fully combined.
- Heat the Oil:
- In a large skillet, pour enough vegetable oil to cover the bottom (about 1/4 inch deep).
- Heat the oil over medium-high heat until it’s shimmering but not smoking.
- Fry the Pancakes:
- Scoop about 1/4 cup of the potato mixture and form it into a pancake shape.
- Carefully place the pancake into the hot oil. Flatten it slightly with the back of a spoon.
- Fry the pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Transfer the cooked pancakes to a plate lined with paper towels to drain any excess oil.
- Serve:
- Serve the potato pancakes hot with your choice of toppings, such as sour cream, applesauce, or chives.
