Potato Pancakes (Latkes)

Ingredients:

  • 4 large potatoes
  • 1 medium onion
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • Optional toppings: sour cream, applesauce, chives

Instructions:

  1. Prepare the Potatoes and Onion:
    • Peel the potatoes and the onion.
    • Grate the potatoes and the onion using a box grater or a food processor.
  2. Remove Excess Moisture:
    • Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible. This step is crucial for getting crispy pancakes.
  3. Mix Ingredients:
    • Transfer the grated and drained potatoes and onion to a large bowl.
    • Add the eggs, flour, salt, and pepper. Mix well until the ingredients are fully combined.
  4. Heat the Oil:
    • In a large skillet, pour enough vegetable oil to cover the bottom (about 1/4 inch deep).
    • Heat the oil over medium-high heat until it’s shimmering but not smoking.
  5. Fry the Pancakes:
    • Scoop about 1/4 cup of the potato mixture and form it into a pancake shape.
    • Carefully place the pancake into the hot oil. Flatten it slightly with the back of a spoon.
    • Fry the pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy.
    • Transfer the cooked pancakes to a plate lined with paper towels to drain any excess oil.
  6. Serve:
    • Serve the potato pancakes hot with your choice of toppings, such as sour cream, applesauce, or chives.
