Pineapple Fritter Rings Recipe

Ingredients:

  • 1 can pineapple rings, drained
  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 large egg
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions:

  1. Prepare the Pineapple:
    • Drain the pineapple rings and pat them dry with paper towels.
  2. Make the Batter:
    • In a mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon (if using).
    • In another bowl, beat the egg, then add the milk and vanilla extract. Mix well.
    • Gradually add the wet ingredients to the dry ingredients, stirring until you have a smooth batter.
  3. Heat the Oil:
    • Pour vegetable oil into a deep-frying pan or pot to a depth of about 1-2 inches. Heat the oil over medium-high heat until it reaches 350°F (175°C).
  4. Fry the Pineapple Rings:
    • Dip each pineapple ring into the batter, making sure it is well coated.
    • Carefully place the battered rings into the hot oil. Fry in batches, avoiding overcrowding the pan.
    • Fry each side for about 2-3 minutes or until golden brown and crispy. Use tongs or a slotted spoon to turn the rings as they cook.
  5. Drain and Serve:
    • Remove the fritter rings from the oil and place them on a plate lined with paper towels to drain any excess oil.
    • Dust the fritters with powdered sugar while still warm.
  6. Enjoy:
    • Serve the pineapple fritter rings warm, either on their own or with a scoop of vanilla ice cream for a delightful treat.
