Orange Cake

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup freshly squeezed orange juice (about 2-3 oranges)
  • Zest of 2 oranges
  • 1/2 cup plain yogurt or sour cream
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Orange Glaze (optional):

  • 1 cup powdered sugar
  • 2-3 tablespoons freshly squeezed orange juice
  • Zest of 1 orange (optional, for extra flavor)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Mix in the orange zest and freshly squeezed orange juice until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the yogurt or sour cream, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  7. Pour the batter into the prepared cake pan and spread it out evenly.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

For the Orange Glaze (optional):

  1. In a small bowl, whisk together the powdered sugar, freshly squeezed orange juice, and orange zest until smooth.
  2. Once the cake has cooled completely, drizzle the glaze over the top of the cake.
  3. Allow the glaze to set for a few minutes before slicing and serving.
