Ingredients:

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper (optional)
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • 1/2 teaspoon dried oregano (optional)

Topping:

  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin or line with silicone baking cups.
  2. Mix the meatloaf: In a large bowl, combine the ground beef, breadcrumbs, chopped onion, chopped bell pepper (if using), milk, ketchup, egg, minced garlic, Worcestershire sauce, salt, pepper, thyme, and oregano. Mix until well combined.
  3. Form the muffins: Divide the meat mixture evenly among the muffin cups, pressing gently to fit.
  4. Prepare the topping: In a small bowl, mix together the ketchup, brown sugar, and mustard. Spoon a small amount of the mixture on top of each meatloaf muffin.
  5. Bake: Bake in the preheated oven for 20-25 minutes, or until the meatloaf muffins are cooked through (internal temperature should reach 160°F/70°C).
  6. Serve: Let the muffins cool for a few minutes before removing them from the tin. Serve with your favorite sides like mashed potatoes or a green salad.
