Lime Cake Recipe
Ingredients:
- For the cake:
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1/2 cup sour cream
- 1/2 cup whole milk
- 1/4 cup freshly squeezed lime juice
- 1 tablespoon lime zest (from about 2-3 limes)
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- For the lime glaze:
- 1 cup powdered sugar
- 2 tablespoons freshly squeezed lime juice
- 1 teaspoon lime zest
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 9-inch round cake pans.
- Prepare the Cake Batter:
- In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the sour cream, whole milk, lime juice, and lime zest until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Bake the Cake:
- Pour the batter into the prepared baking pan(s) and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan(s) for about 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Lime Glaze:
- In a small bowl, whisk together the powdered sugar, lime juice, and lime zest until smooth.
- Adjust the consistency by adding more powdered sugar (for a thicker glaze) or more lime juice (for a thinner glaze) as needed.
- Glaze the Cake:
- Once the cake is completely cool, drizzle the lime glaze over the top, allowing it to drip down the sides.
- Serve and Enjoy:
- Let the glaze set for a few minutes before slicing and serving.
- Enjoy your delicious homemade lime cake!
Feel free to garnish the cake with extra lime zest or slices for an extra burst of citrus flavor and visual appeal. Enjoy your baking!
