Ingredients:

For the crust:

  • 2 ½ cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, cold and cut into cubes
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 6-8 tablespoons ice water

For the filling:

  • 6-8 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • A pinch of salt
  • 1 tablespoon lemon juice

For assembling:

  • 1 egg (for egg wash)
  • 1 tablespoon milk or water (for egg wash)
  • Additional granulated sugar (for sprinkling on top)

Instructions:

1. Prepare the crust:

  • In a large mixing bowl, combine flour, sugar, and salt.
  • Add the cold cubed butter. Using a pastry cutter or your hands, work the butter into the flour mixture until it resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
  • Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.

2. Prepare the filling:

  • In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Toss until the apples are evenly coated. Set aside.

3. Preheat your oven:

  • Preheat the oven to 375°F (190°C).

4. Roll out the dough:

  • On a lightly floured surface, roll out one disc of dough into a circle large enough to line the bottom and sides of your pie dish. Carefully transfer the dough to the pie dish.

5. Add the filling:

  • Pour the apple filling into the prepared pie crust, spreading it out evenly.

6. Top the pie:

  • Roll out the second disc of dough into a circle large enough to cover the top of the pie. You can create a lattice crust or simply place the entire circle over the filling. Trim any excess dough and crimp the edges to seal.
