Ingredients:

For the Skewers:

  • 2 boneless, skinless chicken breasts
  • 2 ripe mangoes
  • 1 red bell pepper
  • 1 red onion
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)

For the Marinade:

  • 3 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

For Garnish (optional):

  • Fresh cilantro, chopped
  • Lime wedges

Instructions:

  1. Prepare the Marinade:
    • In a bowl, whisk together olive oil, soy sauce, honey, minced garlic, lime juice, ground cumin, paprika, salt, and pepper.
