Creamy Tuscan Tortellini Recipe

Ingredients:

  • 1 package (20 oz) cheese tortellini
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup baby spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)

Instructions:

  1. Cook the Tortellini:
    • Cook the tortellini according to package instructions. Drain and set aside.
  2. Prepare the Sauce:
    • In a large skillet, heat the olive oil over medium heat.
    • Add the chopped onion and sauté until translucent, about 3-4 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Add Tomatoes and Spinach:
    • Stir in the sun-dried tomatoes and cook for 2-3 minutes.
    • Add the baby spinach and cook until wilted, about 1-2 minutes.
  4. Make the Creamy Sauce:
    • Pour in the heavy cream and chicken broth, stirring to combine.
    • Bring the mixture to a simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly.
  5. Add Cheese and Seasoning:
    • Stir in the grated Parmesan cheese until melted and well combined.
    • Add the Italian seasoning, salt, and pepper to taste.
  6. Combine Tortellini and Sauce:
    • Add the cooked tortellini to the skillet and gently toss to coat the pasta in the creamy sauce.
  7. Serve:
    • Garnish with fresh basil, if desired, and serve immediately.

Tips:

  • For added protein, you can include cooked chicken, shrimp, or sausage.
  • If you prefer a thicker sauce, let it simmer a bit longer to reduce.
  • Adjust the seasoning to your taste preferences, adding more garlic, cheese, or spices as desired.
