- 4 medium potatoes, peeled and diced
- 1 lb (about 450g) boneless, skinless chicken breasts, diced
- 8 slices of bacon, cooked and crumbled
- 1 packet (1 oz or about 28g) of ranch dressing mix
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley or chives for garnish (optional)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Potatoes: In a large bowl, toss the diced potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Spread them out evenly in a greased 9×13 inch baking dish.
- Bake Potatoes: Bake the potatoes in the preheated oven for about 25-30 minutes or until they are tender and golden brown. Stir them halfway through to ensure even cooking.
- Cook Chicken: While the potatoes are baking, cook the diced chicken in a skillet over medium heat until fully cooked. Season with salt and pepper to taste.
- Mix Ingredients: In a separate bowl, mix the ranch dressing mix, sour cream, and milk until smooth.
- Combine: Once the potatoes are done, remove the baking dish from the oven. Add the cooked chicken and crumbled bacon to the dish, then pour the ranch mixture over everything. Stir to combine.
- Add Cheese: Sprinkle the cheddar and mozzarella cheeses evenly over the top.
- Bake Again: Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven and let it cool slightly before serving. Garnish with fresh parsley or chives if desired.
