Carrot Sticks Salad
Ingredients:
- 4 large carrots, peeled and cut into sticks
- 1 cup cucumber, cut into sticks
- 1/2 cup red bell pepper, cut into sticks
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
- Prepare the Vegetables:
- Peel the carrots and cut them into sticks.
- Cut the cucumber and red bell pepper into sticks.
- Thinly slice the red onion.
- Chop the fresh parsley.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
- Assemble the Salad:
- In a large bowl, combine the carrot sticks, cucumber sticks, red bell pepper sticks, red onion, and parsley.
- Pour the dressing over the vegetables and toss to coat evenly.
- Optional:
- Sprinkle the crumbled feta cheese over the top of the salad for added flavor and texture.
- Serve:
- Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld together.
