Carrot Sticks Salad

Ingredients:

  • 4 large carrots, peeled and cut into sticks
  • 1 cup cucumber, cut into sticks
  • 1/2 cup red bell pepper, cut into sticks
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables:
    • Peel the carrots and cut them into sticks.
    • Cut the cucumber and red bell pepper into sticks.
    • Thinly slice the red onion.
    • Chop the fresh parsley.
  2. Make the Dressing:
    • In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
  3. Assemble the Salad:
    • In a large bowl, combine the carrot sticks, cucumber sticks, red bell pepper sticks, red onion, and parsley.
    • Pour the dressing over the vegetables and toss to coat evenly.
  4. Optional:
    • Sprinkle the crumbled feta cheese over the top of the salad for added flavor and texture.
  5. Serve:
    • Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld together.
