Caprese Pasta Salad
Ingredients:
- 12 oz (340g) pasta (such as rotini or penne)
- 2 cups cherry tomatoes, halved
- 8 oz (225g) fresh mozzarella balls, halved
- 1 cup fresh basil leaves, torn or chopped
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: 1/4 cup pine nuts, toasted
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water to cool the pasta quickly.
- Prepare the Dressing:
- In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper.
- Assemble the Salad:
- In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, mozzarella balls, and fresh basil leaves.
- Pour the dressing over the salad and toss gently to combine.
- Optional Additions:
- If using, sprinkle toasted pine nuts over the top for added crunch and flavor.
- Serve:
- Serve immediately or refrigerate for an hour to allow the flavors to meld. Serve cold or at room temperature.
