Apple Salad
Ingredients:
- 3 large apples (a mix of tart and sweet varieties, such as Granny Smith and Honeycrisp)
- 1 cup seedless grapes, halved
- 1 cup celery, chopped
- 1/2 cup walnuts, chopped (optional)
- 1/4 cup dried cranberries or raisins
- 1/2 cup plain Greek yogurt or mayonnaise
- 1 tablespoon honey or maple syrup
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- Prepare the Apples:
- Core and chop the apples into bite-sized pieces. You can peel them if you prefer, but leaving the peel on adds extra fiber and color.
- Mix the Salad:
- In a large bowl, combine the chopped apples, halved grapes, chopped celery, walnuts (if using), and dried cranberries or raisins.
- Make the Dressing:
- In a small bowl, whisk together the Greek yogurt or mayonnaise, honey or maple syrup, and lemon juice. Season with a pinch of salt and pepper.
- Combine:
- Pour the dressing over the apple mixture and toss until everything is well coated.
- Chill:
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
- Serve:
- Serve chilled as a side dish or a light dessert.
