Apple Salad

Ingredients:

  • 3 large apples (a mix of tart and sweet varieties, such as Granny Smith and Honeycrisp)
  • 1 cup seedless grapes, halved
  • 1 cup celery, chopped
  • 1/2 cup walnuts, chopped (optional)
  • 1/4 cup dried cranberries or raisins
  • 1/2 cup plain Greek yogurt or mayonnaise
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Prepare the Apples:
    • Core and chop the apples into bite-sized pieces. You can peel them if you prefer, but leaving the peel on adds extra fiber and color.
  2. Mix the Salad:
    • In a large bowl, combine the chopped apples, halved grapes, chopped celery, walnuts (if using), and dried cranberries or raisins.
  3. Make the Dressing:
    • In a small bowl, whisk together the Greek yogurt or mayonnaise, honey or maple syrup, and lemon juice. Season with a pinch of salt and pepper.
  4. Combine:
    • Pour the dressing over the apple mixture and toss until everything is well coated.
  5. Chill:
    • Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve:
    • Serve chilled as a side dish or a light dessert.
