Ingredients

For the Salad:

  • 3 ears of fresh corn, kernels removed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup feta cheese (optional)
  • Salt and pepper to taste

For the Avocado Cilantro Dressing:

  • 1 ripe avocado
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice (about 1 lime)
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 tablespoon honey (optional)
  • Salt and pepper to taste
  • 2-3 tablespoons water (to thin the dressing as needed)

Instructions

  1. Prepare the Salad:
    • In a large bowl, combine the corn kernels, cherry tomatoes, cucumber, red bell pepper, red onion, and avocado. Add the chopped cilantro and feta cheese if using. Season with salt and pepper to taste.
  2. Make the Dressing:
    • In a blender or food processor, combine the avocado, cilantro, lime juice, olive oil, garlic, honey, salt, and pepper. Blend until smooth and creamy. Add water, a tablespoon at a time, to reach your desired consistency.
  3. Assemble the Salad:
    • Pour the avocado cilantro dressing over the salad and gently toss to combine. Taste and adjust seasoning if necessary.
  4. Serve:
    • Serve immediately, or refrigerate for up to an hour before serving to allow the flavors to meld together.
