Jerusalem Artichoke Salad

Ingredients:

  • 4-5 Jerusalem artichokes (also known as sunchokes), scrubbed clean
  • 1 apple (Granny Smith or another tart variety), cored and thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup mixed salad greens (arugula, spinach, or a mix)
  • ¼ cup walnuts, toasted and chopped
  • ¼ cup feta cheese, crumbled
  • Fresh herbs (like parsley or dill) for garnish

Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions:


Prepare the Jerusalem Artichokes:

Thinly slice the Jerusalem artichokes. You can use a mandoline or a sharp knife. If you prefer them less crunchy, blanch the slices in boiling water for 2-3 minutes, then immediately cool them in ice water.

Make the Dressing:

  • In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.

Assemble the Salad:

  • In a large bowl, combine the sliced Jerusalem artichokes, apple slices, and red onion.
  • Drizzle the dressing over the vegetables and toss gently to coat.
  • Add the mixed greens and gently toss again.

Serve:

  • Transfer the salad to a serving platter or individual plates.
  • Sprinkle with toasted walnuts and crumbled feta cheese.
  • Garnish with fresh herbs.
