Caprese Pasta Salad

Ingredients:

  • 12 oz (340g) pasta (such as rotini or penne)
  • 2 cups cherry tomatoes, halved
  • 8 oz (225g) fresh mozzarella balls, halved
  • 1 cup fresh basil leaves, torn or chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: 1/4 cup pine nuts, toasted

Instructions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water to cool the pasta quickly.
  2. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  3. Assemble the Salad:
    • In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, mozzarella balls, and fresh basil leaves.
    • Pour the dressing over the salad and toss gently to combine.
  4. Optional Additions:
    • If using, sprinkle toasted pine nuts over the top for added crunch and flavor.
  5. Serve:
    • Serve immediately or refrigerate for an hour to allow the flavors to meld. Serve cold or at room temperature.
