Chicken Spaghetti Recipe

Ingredients:

  • 2 cups cooked chicken, shredded
  • 12 oz spaghetti
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
  • 1 small onion, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup red bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp seasoned salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 cup grated Parmesan cheese (optional, for topping)

Instructions:

  1. Cook the Spaghetti:
    • Cook the spaghetti according to package directions until al dente. Drain and set aside.
  2. Prepare the Chicken:
    • If you don’t have pre-cooked chicken, you can boil or bake chicken breasts until fully cooked, then shred.
  3. Make the Sauce:
    • In a large skillet, heat a small amount of oil over medium heat. Add the chopped onion and bell peppers, and sauté until soft, about 5-7 minutes.
    • Add the minced garlic and cook for another minute.
    • Stir in the cream of mushroom soup, cream of chicken soup, diced tomatoes with green chilies, and chicken broth. Mix well.
    • Add the seasoned salt, black pepper, garlic powder, onion powder, and cayenne pepper (if using). Stir to combine.
    • Bring the mixture to a simmer, then reduce the heat and cook for about 5 minutes, stirring occasionally.
  4. Combine Ingredients:
    • Add the shredded chicken to the sauce and mix well.
    • Add the cooked spaghetti and 1 1/2 cups of the shredded cheddar cheese to the sauce. Toss everything together until the spaghetti is well coated and the cheese is melted.
  5. Bake:
    • Preheat your oven to 350°F (175°C).
    • Pour the spaghetti mixture into a large baking dish.
    • Top with the remaining 1/2 cup of shredded cheddar cheese and grated Parmesan cheese if desired.
    • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Let the chicken spaghetti cool for a few minutes before serving. Enjoy!
