Here’s a classic beef soup recipe:

Ingredients:

  • 1 lb (450g) beef stew meat, cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 6 cups (1.5 liters) beef broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: chopped parsley for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic to the pot and sauté until they start to soften, about 3-4 minutes.
  3. Add the cubed beef to the pot and cook until browned on all sides, about 5-6 minutes.
  4. Once the beef is browned, add the sliced carrots and celery to the pot.
  5. Pour in the beef broth, then add the bay leaves and dried thyme.
  6. Season with salt and pepper to taste.
  7. Bring the soup to a simmer, then reduce the heat to low and cover the pot.
  8. Let the soup simmer gently for about 1 to 1.5 hours, or until the beef is tender.
  9. Once the beef is tender, taste the soup and adjust the seasoning if needed.
  10. Remove the bay leaves from the soup.
