Ingredients:

  • 3 cups of apples, peeled, cored, and diced
  • 2 cups of all-purpose flour
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1/2 cup (1 stick) of unsalted butter, softened
  • 1 cup of granulated sugar
  • 1/2 cup of brown sugar, packed
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • 1 cup of buttermilk

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in the diced apples, ensuring they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
  10. Once the cake is completely cooled, you can dust it with powdered sugar or drizzle with a simple glaze if desired.
